Palma keeps its cocktail bars close together, every one on this page within about a kilometer and a half of the others. The best bars in Palma sit in the Centre, in La Llotja, in Sa Gerreria in the old town and in Santa Catalina. Bar Abaco, named for the huge abaci on the columns of its entrance hall, opened in December 1981 inside C'an Marcel, a Mallorcan mansion in La Llotja whose restored rooms recall its baroque age. In the Centre, Bar Nicolás on the Plaça del Mercat takes particular care over its gin and tonics, and Brassclub, Rafa Martín's classic cocktail bar on the Passeig Mallorca, pairs house signatures with the classics. LAB in Santa Catalina doubles as a bartending academy and stays open until three on Fridays and Saturdays. In Sa Gerreria, Salvatore Camagna's 20-seat Dangerous Water builds a seasonal list from homemade ingredients and Mallorcan produce, with a full non-alcoholic section. Bar Abaco does not take table reservations, so plan to walk in. These are the bars we would start with.

Bar Abaco opened on 22 December 1981 inside C'an Marcel, a Mallorcan mansion on Carrer de Sant Joan in La Llotja whose rooms were restored to recall the baroque splendour of the age the house was built in, as if every night were a feast day. The name comes from the enormous abaci on the columns of the entrance hall, where carriages and horses once came in. It serves cocktails, champagne and cava, wine, beer, fresh juices and desserts, and does not take table reservations.

Bar Nicolás calls itself versatile, cosmopolitan and with a touch of bistro, blending bar and cocktail lounge on the Plaça del Mercat in the heart of Palma. Its signature is a cocktail menu of the greatest hits of mixology, and its bartenders take particular care with the gin and tonic, choosing the gins and the botanicals that lift them. Open from noon every day, until one, and until two from Thursday to Saturday.
Brassclub is a classic cocktail bar run by Rafa Martín, inspired, in its own words, by the elegance of New York clubs but with a character of its own on the Passeig Mallorca in the centre of Palma. The list is split between Brassclub's own signature cocktails and the classics for traditionalists, with a snack menu built to go with them, and the team will steer anyone who cannot decide. Open from six every evening, from five on Friday and Saturday, until half past one or half past two.
LAB is a cocktail bar and bartending academy on Carrer de Sant Magí in Santa Catalina, open every night of the week, that calls itself the best cocktail bar in Mallorca. Alongside the bar it runs bartending courses, private classes and masterclasses, and a take-away bar, consulting and catering arm. Open from seven until half past two, and until three on Fridays, Saturdays and bank holidays.
