Dangerous Water is the intimate, 20-seat project of veteran bartender Salvatore Camagna, who traded a decade at Port de Sóller’s Minibar for a stone-arched room in the old town’s reborn red-light quarter.
A Prohibition-Era Name with a Story to Tell
The name is not decorative. Dangerous Water borrows from the secret pictogram language American hobos scratched onto fence posts and rail cars in the late 19th and early 20th centuries. The symbols flagged shelter, food, work, danger, or water for the next traveler passing through. During Prohibition (1920-1933), that underground vocabulary bled into the bootlegging trade, when spirits moved in the shadows and every bottle needed a cover story.
Camagna, whose passion for the history of cocktail culture runs alongside more than 20 years of making them, distilled the reference into a house line that doubles as the bar’s tagline: every spirit begins with water, but after a couple of drinks, water becomes Dangerous Water.
From Port de Sóller to Palma
Camagna’s route to Sa Gerreria took in five countries and a résumé built in luxury hospitality. He spent more than ten years running Minibar in Port de Sóller, put in shifts at La Residencia in Deià and the Jumeirah Port Sóller Hotel & Spa, and worked behind the bar in England, Ireland, Hong Kong, and Singapore before deciding it was time to build something of his own.
“My goal is simple,” he says. “To create cocktails with personality, precision and unforgettable flavours while offering genuine hospitality.”
Sa Gerreria, Reborn
The location is deliberate. Sa Gerreria was for decades Palma’s old red-light district, a warren of narrow streets next to the site of the former La Rafi and a short walk from Bar Flexas. It is a neighborhood with history, and a nightlife that was long misunderstood; as local press put it when the bar opened, context adds something here, and for some it adds a lot. Stone arches, high ceilings, and low light give the room a moody, dark character that Palma’s Un Buen Plan column summed up as “dark and sexy, a place that invites you to stay.” A small terrace handles the early hours; the inside is built for staying.
With around 20 indoor seats, the format is intimate by design. This is not a volume bar, and it is not trying to be.
The Menu: Long, Short, and Nothing Compromised
The drinks list changes with the seasons and leans on Mallorcan produce when it is at its best. Camagna splits it cleanly into long drinks for refreshment and short, spirit-forward drinks for intensity, with everything built from house-made ingredients.
“Every signature cocktail is created in-house using homemade ingredients, seasonal products and original flavour combinations,” he says. “We focus on quality rather than quantity and prefer to create unique drinks instead of following trends.”
Signature serves land at 13€, classics at 12€, and a proper non-alcoholic section at 10€.
The Signature List
The signature list runs seven deep. Jasmine Hard Tea (gin, mango, jasmine, lemon tea) is the current house favorite, while El Gusano (mezcal, agave, chipotle, worm salt) is its short-drink counterweight, the kind of serve local press described as stinging, smoking, and putting you firmly in your place. The list rounds out with Drupa (mezcal, mango, chocolate, basil), Persica (tequila, peach, vanilla), Kion (whisky, ginger, orgeat), Iria (gin, bergamot, coconut, lime), and Eirene (vodka, mandarin, walnuts).
Classics run the expected canon: Negroni, Margarita, Whisky Sour, Dark and Stormy, Paloma, Espresso Martini. On the zero-proof side, Eunoia (pineapple, sugar, lemon, mint) and Ágape (0.0% gin, orange, rosemary) are treated as full cocktails rather than an afterthought.
Camagna has said the bar was born to play in the first division, and that it hasn’t come to Palma to make compromise mojitos. The résumé backs the first claim; the menu is built around the second. On 21 August Dangerous Water marks its first anniversary, one year into proving both.
