Devil's Cut

Shingo Gokan's first Madrid venture opened in 2024 in the premises of Casa Pueblo, a forty-year-old neighborhood sherry bar, keeping its curving counter. The list crosses Japanese bartending with Spanish sherry (see the Devil's Bamboo: fino, dry vermouth, tomato), a whole section revives classics from Gokan's Angel's Share days in New York, and the snacks run to dashi olives and miso-marinated anchovies. It won Best New International Cocktail Bar at the 2025 Tales of the Cocktail Spirited Awards.

1862 Dry Bar

Alberto Martínez's Malasaña bar takes its name from 1862, the year Jerry Thomas published the first cocktail book, and the room honors that lineage with a subtle speakeasy feel, minimalist decor, an intimate downstairs and one of the city's deep spirits collections. The Cantaloupe Gibson, pisco, cantaloupe, manzanilla, grapefruit bitters, rose water, shows the range.

Fat Cats Cocktail House

A 1970s-styled clandestine lounge themed on Salerno and Latella, 'the notorious Fat Cats burglars', with an interior modelled on the very homes they robbed and every cocktail written into the caper. The Gilda works gin with olives, piparra and anchovy; Smoke & Vice sends mezcal through bacon, barbecue and lapsang tea.

'Coctelería emocional' is Lovo's own term, an emotional cocktail bar on Calle de Echegaray with Josephine Baker as house muse, haute-gastronomy techniques, and a tribal-themed menu whose 'Lovo Bar Tribe' section hosts guest serves from the likes of Employees Only and Handshake Speakeasy. Cocktails run €12-15, and the room goes until five or six in the morning.

Momus

A cocktail-only bar in the Justicia neighborhood of Madrid. It serves no beer, wine or food, though non-alcoholic options appear on the cocktail list. The interior is deliberately minimalist so that the drinks remain the focus, with the Kingston Negroni among its signature serves.
