Bryant's opened in 1936 as a Miller tied house and turned to cocktails only around 1938, which makes it Milwaukee's oldest cocktail lounge, and it has never printed a menu; you tell the bartender what you like. Founder Bryant Sharp is credited with the Pink Squirrel, the Blue Tail Fly and the Banshee, the upstairs Velvet Lounge was added in 1968, and the room was rebuilt after a fire in 1971, gold-plated McIntosh stereo included. The James Beard Foundation named it an Outstanding Bar semifinalist in 2025 and Tales of the Cocktail gave it the Timeless U.S. Award in 2026.
At Random has been serving Bay View specialty cocktails since 1964 and calls itself the neighbourhood's cocktail lounge, a dark room where the ice cream drinks are as much the point as the classics. It opens at five from Tuesday to Friday and at three on the weekend, and is closed on Monday. The 2020 Spirited Awards placed it in the U.S. top ten for Best American Cocktail Bar.
PufferFish is Milwaukee's only rooftop tropical bar, on the sixth floor of Hotel Metro downtown, with cocktail, beer and wine menus and a spiritless list alongside. The Spirited Awards named it a U.S. Central honoree for Best U.S. Hotel Bar in 2026.
The Mothership describes itself as a corner bar in the Bay View neighbourhood serving the finest cocktails and, in its words, a not bad beer selection, under the hashtag very serious bar. Every spirit on the list is available three ways, a one-ounce shot, a mixed drink or a two-ounce pour, and the drinks page is the menu. It was a James Beard Outstanding Bar semifinalist in 2026.
Boone & Crockett's motto is pretentious drinks without the pretentiousness: innovative, classically crafted cocktails in a room the bar describes as welcoming, with events like its annual Flannel Fest in October. It sits on South Water Street, opens at four midweek and at three from Friday to Sunday, and runs until two.
