The Hudson Rooms is the rooftop bar and restaurant at Capella Hanoi in Hoan Kiem, themed on the travel renaissance of the 1920s and on New York's Fulton Fish Market. It calls itself the home of oysters and caviar, pairing them with around two hundred whiskey labels and a signature whiskey cart.
A cocktail bar set in a former architect's studio on the shore of West Lake, presenting itself as the 14th craft village of the Tây Hồ district. Angelina is the cocktail bar and whisky lounge of the Sofitel Legend Metropole Hanoi, done in a Scottish highland style with gold, green and blue accents. It is spread over several levels: a casual terrace, a lively ground floor bar, a dining room upstairs and a private whisky and cigar lounge. The bar pairs bespoke cocktails with a deep whisky collection, wines and Cuban cigars, and late night bar food runs until 12:30am.
The Bamboo Bar is the Metropole's poolside bar, thatched roof and wooden floor beside the swimming pool, which the hotel calls the busiest spot in the house and the most storied, since the historic Metropole bomb shelter lies beneath it. The signature pour is the Graham Greene Martini, with light meals, ice cream and coffee through the day, and it opens at six in the morning and runs until eleven at night.
Kumquat Tree is a speakeasy in Tây Hồ that describes itself as an East meets West bar, where the journey back in time begins and stories of a golden age are told. Guests find it behind a red door, and the bar runs guest shifts and seasonal parties through the year. It opens nightly from 6pm until 2am.
Nê is a cocktail bar on Tống Duy Tân in Hoàn Kiếm, close to the centre of old Hanoi. Its current menu is laid out as a journey of stops across Vietnam, with drinks such as Ô Quy Hồ, inspired by the misty mountain pass of the northwest, and The Dynasty, a nod to Huế. The bar also runs live music nights and hosts guest bartender shifts.
USE is a cocktail bar on Ngõ Huế in Hai Bà Trưng. The team says a bar is more than the drinks it serves, pointing to the ingredients it chooses, the techniques it refines and the people behind the counter.
