The Loft is Raúl Yáñez Campos's bid to give Chile a bar of international standards, classic cocktails, wine culture and design brought together on the fifth floor of Mercado Urbano Tobalaba (MUT) in Las Condes, a step from Metro Tobalaba. The wine program, directed by Miguel Ángel Millán, World's Best Sommelier 2023, runs to more than 100 wines by the glass and over 300 labels by the bottle; every classic cocktail comes in two builds, Classic on traditional spirits or Signature on premium labels, executed 'with technique, respect, and excellence, just as they were conceived'. The room, by Rebel Rebel Design, pairs contemporary architecture with the elegance of the classic bars: a sharing-style kitchen of oysters, cheeses, cured meats and tartares, cigars and international whiskies, and vinyl spun through a 1979 Japanese reel-to-reel. The bar works mostly on walk-ins, keeping its natural rhythm, table reservations are a benefit of The Loft Club membership (7 UF a year).
Siete Negronis is the Providencia cocktail bar named for the drink it is built around, now at Constitución 241 at the Bellavista end of the neighbourhood. Its Instagram carries the menu, the music and the bookings link; the website is under construction.
Bar La Providencia describes itself in three lines: contemporary Chilean cocktails, greedy cooking, and more than eighty labels of pisco. It sits on Isabel La Católica in Las Condes, takes reservations by email, runs a guest-bartender programme and hires out for events. Open Monday to Thursday from six until half past midnight and until one on Friday and Saturday.
Gracielo tells arriving guests they have reached paradise, and puts its offer in three words on Instagram: cocktails, gastronomy, architecture with history. It occupies an old house on Cirujano Guzmán in Providencia, hires its rooms and terrace for private and corporate events, and pitches itself for the after office. Open from five, until one early in the week and two from Thursday to Saturday, closed Sunday.
Lolita Jones brings what it calls the daring, pleasure-seeking spirit of Mexican street food to CV Galería in Vitacura, with a drinks list that runs from eccentric liqueurs to house creations and what it says is the largest open-air bar in Chile. Its Instagram puts it plainly: taquería and cocktail bar. The corn is processed on site and the tortillas made to order. Open from half past twelve every day, until one or two, and until half past two on Friday and Saturday.
