Shingo Gokan's first Madrid venture opened in 2024 in the premises of Casa Pueblo, a forty-year-old neighborhood sherry bar, keeping its curving counter. The list crosses Japanese bartending with Spanish sherry (see the Devil's Bamboo: fino, dry vermouth, tomato), a whole section revives classics from Gokan's Angel's Share days in New York, and the snacks run to dashi olives and miso-marinated anchovies.
