The best bars in Austria stretch from Vienna's old town to the Tyrol, and this year they are led by a fruit-wine bar in Innsbruck. Dunlin Bar, opened in 2020 on Meraner Strasse, ferments its own fruit wines and fruit vermouths as the base of its signature drinks and mixes a Mezcaloni with house peach vermouth and clementine bitters, and closed out the first Europe's 50 Best Bars list at No. 50 in 2026. Bar chef Kostas Karvounis runs a room that balances alpine minimalism with urban warmth. In Vienna's Innere Stadt, Truth & Dare pours inside an 18th-century clergy house on Schönlaterngasse and rotates a weekly mini cocktail. In Salzburg's Schallmoos, Attila Szelhoffer's Burdock is a punch and cocktail bar with house-made syrups, off the tourist trail. Fruit brandy runs deep in the Tyrol: in the village of Stanz alone, 53 licensed distilleries make plum schnapps. Dunlin Bar takes table bookings online and closes on Sundays. These are the thirty-five we would start with.

A bar in central Innsbruck that builds its cocktail program on handcrafted fruit wines and fruit vermouths made in-house from seasonal fruit. Set against an alpine backdrop, it balances mountain minimalism with urban warmth. It was named Mixology's Bar of the Year Austria 2025 and is the only Austrian entry on the inaugural Europe's 50 Best Bars list. The bar holds No. 50 on Europe's 50 Best Bars 2026.

A weekly rotating Mini of the Week is served without revealing its ingredients in advance. The team also runs a second venue, Combo Bar, in the 2nd district.
A speakeasy-style boutique bar in Vienna's 8th district, entered by ringing the doorbell of an unmarked door. There is no fixed menu; bartenders build personalized cocktails around each guest's preferences in a dark, mid-century living-room setting.

A cocktail lounge on Liechtensteinstrasse in the ninth district, open from six every evening. A long list and a room that fills late, away from the tourist circuit of the first district.

Heinz Kaiser's bar on Salzgries in the first district, staged as an apothecary and worked like one: infusions, tinctures and a long shelf of house preparations behind a counter that treats a drink as something compounded rather than poured. Open Tuesday to Saturday from five.

The cocktail bar of the Hotel Englhof in the Zillertal, an unlikely address for a serious list and the reason it is worth the detour.

Liquid Diary opened in 2018 on Adolf-Pichler-Platz in central Innsbruck, and founder Damir Bušić remains its creative head. The bar balances its cocktails with house-made oxymel, a maceration of honey, vinegar and botanicals, and its rule of no refined sugar and no citrus runs across the whole menu. Five house oxymels include Heimat with alpine blossom honey and pear vinegar, Freiheit with linden honey and calamansi vinegar, and Mediterran with passion fruit vinegar and Tasmanian mountain pepper. Signatures include Artemis II with gin, coconut water and tonic, and the Goatfather with tequila, mezcal and mountain pine. Leather-bound diaries beside the menu collect guests' stories that feed the drinks. Walk-in only, cash or bank transfer, Tuesday to Saturday from 18:00.

DJs play from 21:00 on Fridays and Saturdays, and from May to September the Havana Rooftop Bar opens a floor higher.
Bar Amouro sits inside the Aiola Living Store on Schmiedgasse in central Graz, and it grew out of Amouro, the house aperitif: a fruity wine-based vermouth meant to keep summer going whatever the weather, served as the Vermutivo in a turquoise and yellow bottle. The room plays deep blue against rich yellow with golden accents, velvet, padded walls and hidden corners under bright chandeliers. Service runs from breakfast through lunch to dinner, when the kitchen sends out Levantine sharing food such as taftoon bread and meze, alongside Asian dishes served under the Miss Cho name. The drinks list shows Amouro in its many guises, next to a wine list of reds, whites and rosés.

Hommage opened on Lendplatz in Graz on 19 June 2025, run by Bianca Heiling and Stefan Medwenitsch, who first crossed paths at a pop-up project in 2020. The name is a thank-you, in part to the Paul family, whose Café Paul shaped this address. By day it works as a relaxed spot for coffee and brunch; in the evening it becomes a wine lounge built around sharing. The list travels from Burgenland and Styria to France, Italy and Germany, with detours to Spain, Slovenia and even Lebanon. Plates to share include Wulka prosciutto sliced paper thin on a Berkel slicer, anchovies, pickled vegetables and several versions of tarte flambée.

Klapotetz Weinbar has been pouring wine since 2015 in the Renaissance arcaded courtyard of the GRAWE-Hof on Herrengasse, in the middle of the Graz old town, where the bar has its garden in the courtyard. Qualified sommelier Evelyn Merc builds the list of about 130 white and red wines around her personal ties to growers in southern Styria and Burgenland. Around 25 wines are always poured by the glass, and the mix changes every two weeks, ranging from classic Welschriesling to single-vineyard Sauvignon, with rarities from the winemakers' private cellars turning up regularly. Food comes from regional producers: Leitner family meats such as Verhackert and Lendbratl, cheese from the Kasalm on Kaiser-Josef-Platz, and house spreads on fresh bread.
Loft9 is a rooftop restaurant and bar on the ninth floor of DAS RAIQA, in the RAIQA quarter by Innsbruck's main train station, with three terraces and a panorama over the city and the Alps. It opened in April 2026. The kitchen cooks modern Austrian cuisine from breakfast through lunch to dinner, with sharing plates and Josper grill dishes in the evening, yet the bar is billed as a reason to come in its own right. Classic cocktails meet modern twists: the Alpine Mule pairs Zirbin gin with ginger beer and spruce tip syrup, and the spritz list runs to the Maracuja Hibiskus Spritz of Ramazzotti Rosato, passion fruit, secco and soda. Alcohol-free spritzes and mocktails have their own section.

Today the historic 16th-century cellar is home to a list of more than 250 wines, from Austrian classics and international rarities to natural wines and mature vintages, with many of them poured by the glass. A short menu of plates for sharing, such as antipasti, cheese and beef tartare, plus changing daily dishes, keeps the wine at the center.
