Memento Mori is a cacao and botanical cocktail bar on the third floor of the Toranomon Hills Business Tower, led by bartender Shuzo Nagumo. The name is the Latin reminder that we must all die, and the bar honors the fruit, plants and flowers it uses by wasting as little as possible. Cacao appears in every form, from pulp and husk to nibs, cacao butter and couverture, and the team works with fair-trade suppliers such as Cacao Hunters that source from growers in Colombia. The Bean to Glass course opens with the Cacao Pulp Fizz, served in a cacao pod, and chocolate treats are paired with the drinks.
