Folklore sits in Hibiya OKUROJI and comes from Spirits & Sharing, the Tokyo group behind Mixology Salon and Memento Mori. It calls itself a sake, shochu and mixology cocktail bar: Japanese sake, tea, shochu and domestic spirits are blended with Western spirits, and the vessels and ingredients reflect the terroir of the regions they come from. Past examples include a shochu martini infused with blue cheese brandy and a margarita made with two types of sake alongside tequila. Fumihiko Sano Studio designed the austere room with historic materials, including shingles and rafters from temples in Nagano and Yamagata. Seats can be booked online.
