Sips is bringing its Barcelona playbook to VISTA Cocktail Lounge at Caesars Palace, with a two-month residency running from October 31 through December 31. The takeover lands as the Las Vegas resort celebrates its 60th anniversary, pairing one of the most decorated bars of the decade with one of the most recognizable addresses on the Strip.

From Eixample to the Strip

Based in Barcelona’s Eixample district, Sips was named The World’s Best Bar and The Best Bar in Europe at The World’s 50 Best Bars in 2023, and placed No. 3 on the same list in 2024 and 2025. Founded by Simone Caporale and Marc Álvarez in 2021, the bar built its reputation on a flavor-first philosophy: glassware and presentation should elevate the drink, never distract from it. Condé Nast Traveler has called it “an experience full of technique, creativity and no barriers,” while Tasting Table summed up the house style as a place where “serious cocktails are served in unserious forms.”

“Knowing that an iconic global institution like Caesars Palace recognizes the excellent hospitality and cocktail creativity of an independent bar in Barcelona proves that what’s made with purpose will be remembered by many,” said Caporale. “We’re so excited to bring SIPS to Caesars Palace and translate the cocktail experience into great memories in Las Vegas.”

The Drinks

Two signature serves anchor the VISTA menu. Purple Rain is an elegant, modern take on a whiskey sour, built on bourbon mellowed with wild sour honey and beetroot. Mosaic, the more refreshing option, combines pisco brandy with aromatic woods from the Amazon rainforest and arrives in a painted glass that nods to Barcelona’s modernist art movement, a signature example of the bar’s approach to presentation as part of the build rather than decoration on top of it.

A Milestone Partnership

For Caesars Palace, the residency is part of a broader 60th anniversary program. “For six decades, Caesars Palace has set the stage for world-class hospitality and unforgettable experiences guests cannot find anywhere else,” said Sean McBurney, Chief Commercial Officer and Regional President of Caesars Entertainment. “As we celebrate this milestone year, our partnership with SIPS unites one of the world’s most influential cocktail destinations with one of the most iconic resorts on The Strip. The collaboration reflects our commitment to continually introducing innovative experiences while staying true to the timeless spirit that has defined Caesars Palace for generations.”

Visiting the Pop-Up

VISTA Cocktail Lounge sits near Amalfi by Bobby Flay and Dominique Ansel Las Vegas inside Caesars Palace. Reservations are not required, though tables can be booked through the Caesars Palace website. For a bar that normally requires a flight to Barcelona, a walk-in seat on the Strip is a rare proposition, and a benchmark for how far a top-tier independent bar’s brand now travels.
