Diego Cabrera's Salmon Guru has anchored Calle de Echegaray since 2017, 'storytellers with animal instinct' whose mantra holds that only dead fish go with the flow. A 2023 renovation dialled up the neon and comic-book murals; the list runs from the Pantera Jackson milk punch (pisco, mango water, fish sauce) to the Salmon Guru Airways travel serves. Devil's Cut
Shingo Gokan's first Madrid venture opened in 2024 in the premises of Casa Pueblo, a forty-year-old neighborhood sherry bar, keeping its curving counter. The list crosses Japanese bartending with Spanish sherry (see the Devil's Bamboo: fino, dry vermouth, tomato), a whole section revives classics from Gokan's Angel's Share days in New York, and the snacks run to dashi olives and miso-marinated anchovies. It won Best New International Cocktail Bar at the 2025 Tales of the Cocktail Spirited Awards.

Alberto Martínez's Malasaña bar takes its name from 1862, the year Jerry Thomas published the first cocktail book, and the room honors that lineage with a subtle speakeasy feel, minimalist decor, an intimate downstairs and one of the city's deep spirits collections.
