SKAI Bar occupies Level 70 of Swissôtel The Stamford, looking out over the Singapore skyline. Its drinks are led by Head Mixologist Solla Park, who was born in Seoul and has worked at bars including Jigger & Pony and Le Chamber. Her current menu, Solla System, is built around the zodiac and the four elements of fire, earth, air and water, with 12 cocktails, one for each sign, plus four zero-proof drinks; the Banana Boulevardier and Kopi O Kosong are among them. A separate list covers classics such as the Manhattan, Mojito and Old Fashioned. The bar opens daily from 5pm to 1am, with last reservations at 11pm.
