Rogerio Igarashi Vaz opened Bar Trench in Ebisu in 2010, continuing the absinthe lineage of Bar Tram while building something with broader ambitions: a social cocktail bar at heart, with a tightly curated three-cocktail absinthe section that nods to the venue's heritage without defining it. Ranked No. 94 on the World's extended list, Bar Trench is a neighbourhood room that draws regulars and pilgrims in equal measure, with signatures and classics built around Vaz's deep knowledge of his subject. The room carries the dark, atmospheric quality of a European apothecary, and the conversation across the bar runs as long as the menu invites it.
