Shingo Gokan opened this eight-seat, reservation-only omakase cocktail bar in Shibuya in August 2025, and the format represents the logical extreme of Tokyo's precision culture: a single bartender, a fixed sequence of drinks, and no menu to choose from. Each sitting runs as a guided experience through flavours, textures, and temperatures calibrated to the season. Sangai strips away every element of a bar except the relationship between bartender and guest. The intimacy is the product.
