Zuma opened on Raphael Street in Knightsbridge as the first room in what has become a global group, and the bar there still sets the template. It runs all day and takes walk-ins, pouring sake, Japanese whisky and shochu alongside a signature cocktail list that borrows from the kitchen's pantry. The Rubabu pairs vodka with rhubarb-infused sake, passion fruit and lemon, and the Zuma Mai Tai and the raspberry and passion martini round out the house drinks. The lounge sits slightly apart from the sushi and robata counters, and drinks and small plates carry the room through the afternoon gap between lunch and dinner service.
