Proof on Main sits inside the 21c Museum Hotel on West Main Street in downtown Louisville and has been part of the city since 2006. The lounge keeps its own hours and its own cocktail and beer list, with a wine book and a spirits list beside it and a robust collection of Kentucky's best bourbons. Art and Aperitivo Hour runs daily from two until five, pairing a special menu of bites and cocktails with an exclusive drink inspired by artwork from 21c Louisville's current exhibition. The kitchen follows Southern and Appalachian cooking through the seasons of the Ohio River Valley, and the art on the surrounding walls changes as the museum rotates its shows.
