Gemma sits 12 stories up on the roof of the Waldorf Astoria Beverly Hills at 9850 Wilshire Boulevard, with views of the Santa Monica Mountains, Beverly Hills and the Hollywood Hills. Created by Chef Peleg Miron, it serves California-inspired Pan-Asian food, from dim sum and sushi to grilled Wagyu, in a room of sienna, terracotta and muted greens with plush banquettes and an inviting bar. The drinks take in handcrafted cocktails, a curated sake list and wines, with tiki-inspired creations such as the Mai Tai, a Piña Colada and a Scorpion Bowl, plus the Two to Mango Margarita and spirit-free options. It is open daily for lunch and dinner, with brunch on weekends.
