The Wolves opened on September 13, 2018, inside the Alexandria Hotel at 519 South Spring Street, nearly three years after it was first announced. The hotel opened in 1906, and the bar sits in its 1911 annex, a room styled as a Parisian salon with a domed stained-glass ceiling salvaged from an old train station, antique mahogany booths and a white marble bar. Owners Al Almeida and designer Daniel Salin built and decorated it. From the start the bar made its own liqueurs, amari, bitters and vermouths, and the list now leans culinary, with drinks built on asparagus, shiitake and salmon skin and a weekly farmers' market special.

Bar Clara
Bar Clara sits on top of Hotel Per La at 649 S Olive St in Downtown LA, a rooftop lounge with sweeping skyline views and a pool. Its approach is rooted in California's native ingredients, with seasonal dishes such as tuna tostadas, black hummus and prawn tacos. The cocktail list includes Petals and Smoke with mezcal, raspberry and rose water, Velvet Tide with coconut-washed gin and pineapple, and Peel the Heat with rum, Campari and banana liqueur, plus a frozen Passion Play and non-alcoholic drinks. The bar is named for Claire Giannini, and on Sundays it hosts the Bar Clara Swim Club with DJs by the pool. Weekday happy hour runs from noon to 3pm.

Calabra
Calabra is the rooftop bar and restaurant on the seventh floor of the Santa Monica Proper hotel, reached from 7th Street. A circular bar anchors an indoor lounge and a poolside deck with private alcoves, and the drinks list covers seasonal cocktails, small-batch spirits and biodynamic and natural wines. The kitchen serves Mediterranean and Californian plates cooked without seed oils.

The Georgian Room
The Georgian Room is the basement bar and dining room of The Georgian, a historic Art Deco hotel on Ocean Avenue. The hotel restored the room, which first opened in 1933, and runs it as a piano bar and Tuscan-style chophouse, with a long bar, leather booths, martinis and a wine program. Live jazz and piano sets play around a vintage Steinway, and entry is by reservation.
