El Infusionista

Opened in 2018 by founders Luis Alonso Carrión, Jorge Chung, and César Davey, El Infusionista styles itself as an apothecary inspired by the infusionists of traditional Chinese medicine. Tinctures, shrubs, and house macerations line a clinical, laboratory-like room on Manuel Bonilla, and the technique shows up in signature drinks such as the Transfusión, the Xianggu Highball, and the Cáliz del Dragón y el Fénix, paired with an oriental Yin Yang food menu. One of the earliest of the concept bars that now cluster on this Miraflores street alongside María Mezcal, La Cachina, and La Calor, it also runs a second location in Arequipa.
