The Diller Room pours in a space that has served drinks since 1894, inside the 1890 Diller Hotel, built after the Great Fire, with bricks that arrived as ballast in Japanese ships. The bar ran through Seattle's Klondike boom, hid behind a Chinese-laundry front as a Prohibition speakeasy, and lived its Flamingo Room era from 1947 before Rob and Josie Wilson revived it in 2008. Today the draw is a 900-plus-bottle whiskey wall and history in the walls.
