Bar Camillo at Rosewood Hong Kong brings together two No. 1 rankings under one roof: Rosewood Hong Kong, ranked No. 1 in The 50 Best Hotels 2025 and 2026, and Lorenzo Antinori and Justin Shun Wah of Bar Leone, No. 1 in The 50 Best Bars 2025 and 2026. The new bar opens on 25 November 2026 in Tsim Sha Tsui, and it arrives with a clear thesis: strip the formality out of the hotel bar and replace it with the spirit of a great house party.

An Italian Salotto Inside the World’s Best Hotel

The concept draws on the classic Italian salotto, the living room that sits at the center of Italian social life. Bar Camillo is designed as an extension of that idea: a social hub where rigid hotel formality gives way to something eclectic and unpretentious, anchored by exacting cocktail craft and the art of the Negroni.

The modern mid-century interiors run to glossy wood veneers, polished metal, and mirrored walls, set in a palette of gold and alpine green against cream tones. A long banquette along the bar carries the lively, public side of the room, made for dropping in, catching up, and people-watching, while lower seating and enclosed corners further in fold guests into more intimate conversation. A terrace extends the living room outdoors, designed for sitting with a drink and watching the city after sunset, with 50 seats across the indoor and outdoor spaces in total.

“At Bar Camillo, we want to strip away the formality found in a traditional hotel bar. Building on my philosophy of what makes a great bar, Bar Camillo pairs the excitement and spontaneity of a gathering of close friends with fine-tuned, world class mixology and service. We want to offer a setting where guests can enjoy complex drinks without feeling stuffy, where the design and exceptional service prioritises something that is both vibrant and convivial,” says Antinori.

Three Menu Pillars and a Rotating Era

The beverage menu is kept simple and punchy, structured around three pillars. Aperitivi di Benvenuto covers dry, refreshing pours designed to kick off the evening. Cocktail della Casa holds seasonal creations rooted in classic mixology. Playful Party Touches injects pure fun with high-energy offerings.

Drinks are classically rooted with a twist of pop-cultural reference, and the menu changes four times a year. Each edition is built around a season and a specific year, surfacing that era’s cultural touch points throughout the guest experience, from the songs that dominated the Italian pop charts in that moment to the rotating wall art and the cocktails themselves.

The Negroni Chit and the Negroni Trolley

Alongside the menu, guests receive a small chit for tailoring their own Negroni: spirit of choice, garnish, and, most importantly, flavor profile, with floral, savory, and rich directions on offer. The drink is then served tableside on a bespoke Negroni Trolley, assembled and stirred to the exacting needs of each guest.

Camillo, the Padrone di Casa

The bar takes its name from its mascot: Camillo, a cheeky, lovably clumsy bartender who grows more energetic and playful as the night goes on. He personifies what Antinori describes as padroni di casa, the hosts of the home, a reminder that the bartenders are responsible for building the night to a crescendo through warmth, hospitality, and ritual.

The project is a shoulder-to-shoulder collaboration between the Bar Leone founders and Rosewood Hong Kong’s hospitality team, including Managing Director Hugo Montanari, Director of Culinary Operations Fabian Altabert, Hotel Manager Juan Serrano, and F&B Director Sandro Brusco. For Antinori, born in Rome and known for his “cocktail populare” philosophy, with a career spanning London’s Savoy Grill and Dandelyan, Charles H. at Four Seasons Hotel Seoul, and Argo at Four Seasons Hotel Hong Kong, it marks a return to the hotel bar on his own terms: a standalone bar’s energy inside the world’s best hotel.
