Simone Caporale and Marc Álvarez hold the No. 3 position on the World's 50 Best Bars and the Best Bar in Europe title for a third straight year with a program that treats the bar counter as a laboratory stage. The fourteen-seat bar-within-a-bar, Esencia, runs omakase-style liquid tasting menus, ten to fifteen micro-drinks in deliberate sequence, Tuesday through Saturday. Caporale received the Roku Industry Icon Award in 2025, cementing a status that his drinks had already established. Sips operates on the conviction that cocktails can deliver the same complexity as fine dining. It is correct.
