Residencia Mexicana en Tokio is the first-ever concept pop-up from BEES BAR by NARISAWA, transforming the Minami-Aoyama room into an authentic Mexican cantina from August 20 through the end of October 2026, in collaboration with Edo Kobayashi Hospitality.

The residency is the product of a long-standing friendship between Chef Yoshihiro Narisawa and Edo López, drawing on Narisawa’s private tequila collection and López’s Mexico City hospitality group.

The Concept Behind Residencia Mexicana en Tokio

BEES BAR opened in 2018 as Chef Narisawa’s casual counterpart to Restaurant NARISAWA, conceived as a place to drink rare spirits sourced from around the world in a relaxed, social setting. Behind the bar sits one of Japan’s largest private tequila collections, assembled over years of travel through Latin America. Narisawa was inspired by the genuine hospitality and craftsmanship he encountered in the region’s bar culture, and the room was built in part to share that world with guests in Tokyo.

Residencia Mexicana en Tokio pushes that idea further. Rather than a Japanese interpretation of Mexican cuisine, the project sets out to present the food and bar culture of Mexico on its own terms, techniques and traditions intact, in the middle of Aoyama.

The Partnership With Edo Kobayashi Hospitality

The residency’s partner is Edo López, who opened the Japanese restaurant Rokai in Mexico City in 2013. Edo Kobayashi Hospitality (Grupo Kobayashi) has since grown to nearly 30 restaurants, bars, and hotels across Mexico City, Madrid, Miami, and Tokyo, earning international recognition as a group that bridges Japanese and Mexican cultures.

For López and Narisawa, the collaboration is a natural extension of that dialog: a restaurateur best known for bringing Japanese cuisine to Mexico, and a Japanese chef with a deep Mexican spirits collection, setting out together to create something beyond a Japanese interpretation of Mexican cuisine.

The Food

The menu has been curated under Chef Narisawa’s supervision, using premium seasonal ingredients sourced from trusted producers across Japan. The framework is traditional Mexican, built around tostadas, tacos, and enmoladas, with the finest Japanese seafood, vegetables, and meats worked into the dishes. It is a special collection available only during the residency, and press materials also show tiradito and taco-inspired preparations among the plates.

The Drinks

The beverage program centers on original cocktails built with Mexican spirits. Among them is Siete Leguas, making its debut in Japan through the residency. The builds work in seasonal fruits, white peach, mango, and passion fruit among them, framing agave against the fruit calendar of late Japanese summer into autumn.

The Room and the Soundtrack

Beyond food and drink, the residency reshapes the room itself. A music selection curated by López runs through a high-fidelity sound system, an immersive layer meant to let guests experience the spirit of Mexico through the entire environment, not only its food and drinks.

A Collaboration, Not an Adaptation

The collaborators are explicit that this is not a project introducing Mexican cuisine adapted for Japanese tastes. It is a limited-time collaboration born from a long-standing friendship, offering guests the chance to experience authentic Mexican cuisine and bar culture in Tokyo before the room reverts at the end of October.
