Las Palmas sits on Level 33 of Courtyard by Marriott Singapore Novena, a poolside rooftop bar with a 270-degree view of the city and cabanas that can be booked by the pool. Its theme is 1960s Palm Springs, and bartender Ron Aransay's cocktail list draws on the art, film and music of that era: Smoked Glass is a smoky Manhattan riff with Talisker 10 and root beer pepper vermouth, Film Noir is an Earl Grey gin highball, and Tropical Vic tips its hat to Trader Vic. The food leans on Americana, Mexican and Southern California dishes. The bar is closed on Mondays and opens at 3pm on other days.
