L'Officine is a cocktail bar tucked inside the Grand Hôtel-Dieu, set above the Grand Réfectoire restaurant in a space that once served as an apothecary. Guests reach it through the restaurant's kitchens and up a service staircase, arriving in a wood-paneled room with lichen-green banquettes, marble tables and a long balcony facing the great dome. Lighting is low and the mood leans toward jazz. The menu pairs reworked classics with seasonal signature cocktails, and the bartenders will build a drink around a spirit, a flavor or a fruit you name. Alcohol-free cocktails are on the list too, and the snacks run to crispy chicken and charcuterie from the Grand Réfectoire.
