KABIN brings Norwegian hytte, or cabin, culture to Spring Street in Hudson Square. Founder Alex Tangen, who has Norwegian parents and grew up in London, runs it as a coffee bar by day and a cocktail bar and dining room from 4:30pm. Designer Jeanette Didon, whose work includes Aska and Ekstedt, gave it exposed beams, dark woods and sauna-inspired banquettes. Aquavit sits at the heart of the program, with rare bottles behind the bar, and the menu is styled as a vintage SAS in-flight pamphlet. The 13th Warrior arrives with a pony of Miller High Life, and the Janteloven comes with a sidecar to give away. The Pinnacle Guide gives it 1 Pin.
