Etere Rooftop

Etere is the rooftop bar of Palazzo Ripetta, a hotel in a seventeenth-century former convent between Piazza del Popolo and Piazza di Spagna. Bar manager Christian Comparone, who oversees all of the hotel's bars, writes a short contemporary list built on aromatics, seasonality and some fermentation, served above the rooftops of the centro storico.
