Dover Yard is the bar and lounge of 1 Hotel Mayfair, set at the centre of the hotel and overlooking a planted courtyard. The drinks programme is built around low waste: an in-house lab turns leftovers into ferments, liqueurs and cordials, such as a sour mash made from the day's spent lemon husks, and the list favours British spirits and seasonal ingredients. DJs play in the evenings, and the bar runs regular guest takeovers.
