The cocktail program is as ambitious as the collection suggests, with bartenders pulling from rare and vintage spirits to create drinks that would be impossible anywhere with a smaller inventory. The design is Victorian steampunk meets Pacific Northwest lodge, dark wood, leather, and taxidermy, and the crowd ranges from whiskey obsessives to cocktail tourists making the pilgrimage. Canon does not do restraint, and the breadth of the experience is the point.
