The cocktail programme is as ambitious as the collection suggests, with bartenders pulling from rare and vintage spirits to create drinks that would be impossible anywhere with a smaller inventory. The design is Victorian steampunk meets Pacific Northwest lodge — dark wood, leather, and taxidermy — and the crowd ranges from whiskey obsessives to cocktail tourists making the pilgrimage. Canon does not do restraint, and the breadth of the experience is the point.
