Abstract calls itself a full time distillery and a part time bistrot, working out of a room on Rue Duroc in Lyon's first arrondissement. The house makes its own spirits under the name Monochromes: single ingredient bottlings drawn through a bespoke extraction process built to preserve each ingredient's aromatic integrity. Releases carry plain names such as Cucumber, Yellow Bell Pepper, Lemon, Raspberry, Strawberry and Butter, they arrive in small batches with handcrafted bottles, and they form the backbone of what the bar pours. The team behind it includes Remy Savage, Nicolas Minisini, Sara Moudoulaud, Hadrien Moudoulaud, Ismaïl Hamila and Faustine Simorre, gathered, in the house's words, around flavor. Doors open only from Friday through Sunday evenings.
