Tato Giovannoni brings the Georgetown outpost of Florería Atlántico to Torno Subito Miami at The Moore for a five-night residency, kicking off a new international collaboration series in the Design District.

From September 22 to 26, 2026, the Argentine bartender takes over the bar program at the Massimo Bottura restaurant at The Moore. It is the first installment in a new residency series that will bring internationally recognized bar teams into the Torno Subito space, and Giovannoni’s Georgetown team is the one setting the template.

The Residency

Giovannoni will take over the bar for the full five nights with Florería Atlántico D.C., the Washington outpost he opened in 2025 in Georgetown Park at 1066 Wisconsin Avenue NW, in the basement of his Brasero Atlántico restaurant. The residency is supported by WhistlePig Whiskey and Campari, with reservations handled through Resy.

For Torno Subito, the collaboration is the launch of an ongoing program under executive chef Bernardo Paladini. “Torno Subito has always been about bringing people together,” Paladini says. “With this series, we have the chance to welcome friends we admire from around the world to Miami and let them share what makes their bars special – the drinks, certainly, but also the stories, personalities and places behind them. Starting with Tato and Florería Atlántico feels very special. There is so much joy and personality in what they do, and that spirit feels completely at home at Torno Subito.”

Why Florería Atlántico

Hidden beneath a flower shop on Arroyo Street in Buenos Aires, Florería Atlántico opened in 2013 as Giovannoni’s tribute to the immigrant communities that shaped Argentina. The bar reads the country’s cultural history through its cocktails, tracing the ingredients, flavors and traditions that crossed the Atlantic to become part of modern Argentine identity.

A longtime fixture of the list, Florería Atlántico climbed to No. 3 on The World’s 50 Best Bars in 2019, held No. 5 in 2021, and returned at No. 46 in the 2024 edition, when it also collected the Rémy Martin Legend of the List Award. Giovannoni himself was named Altos Bartenders’ Bartender by 50 Best in 2020.

“Every cocktail that we make at Florería Atlántico Georgetown is a small piece of Argentina’s history, its culture and its people,” Giovannoni says. “I’m excited to bring this bit of home to Torno Subito.”

From Pinamar to Buenos Aires to D.C.

Born in the coastal town of Pinamar, Giovannoni studied graphic design, art direction and film before finding his medium behind the bar. His work has since branched into restaurants, beverage production, writing and consulting, but storytelling anchored in Argentine culture has remained the throughline. The 2025 opening of Florería Atlántico and Brasero Atlántico in Georgetown extended that project onto American soil.

Torno Subito’s Miami Program

Torno Subito is Massimo Bottura’s playful interpretation of Italian culture, inspired by the Italian Riviera and the optimism of La Dolce Vita. At The Moore in the Design District, the restaurant balances contrasts of fast and slow, old and new, with interiors that evoke the 1960s Riviera. Under Paladini, the restaurant approaches tradition with curiosity and a sense of playfulness, reimagining Italian culture through a contemporary lens, a shared spirit that makes Florería Atlántico a natural opening act for the series.

The Format

Each residency in the series will take on the personality of the visiting bar, introducing Miami guests to signature cocktails, ingredients and the people behind them, while leaving room for the collaboration to evolve in Miami. The stated ambition is an ongoing exchange between Torno Subito and some of the leading voices shaping culture around the world, using the Design District dining room as the meeting point.
