Cantina OK!, Sydney’s beloved Micro Mezcal Mecca, has launched a new cocktail menu titled Ritual—a collection of inventive drinks inspired by shared cultural practices and everyday moments that ground us. From ceremonial wood-burning to digital detoxing and ancestral cooking techniques, the new offerings elevate the bar’s sensory storytelling to new heights.

Created by MUCHO Hospitality Group’s Creative Director Jeremy Blackmore, Ritual distills global rituals into emotionally resonant flavor experiences. “We’re celebrating some of life’s little rituals,” says Blackmore. “It’s about being present, celebrating the ‘right now,’ and connecting guests to a deeper sense of place.”

Ritual-Inspired Cocktails: From Grass Jelly to Palo Santo

Nevada OK! reimagines a Cantina classic using grass jelly (cincau) made from Mesoma plant gel, paired with pandan ice, vetiver soda, and lemongrass. “It’s a counterpoint to digital life—a silly, serious, and delicious way to ‘touch grass,’” says Blackmore.

Sour OK! explores the global ritual of burning aromatic woods, from Mexican copal to East Asian incense. The cocktail blends palo santo–infused tequila and cherry wood with milk-washed whites, coconut, and sago pearls, resulting in a silky drink with depth and texture.

Whip OK! draws inspiration from Recado, a spice paste made from slow-burned chilies. This cocktail layers mezcal, tequila, lime, burnt chili, and blackberry sorbet, finished with a spray of silver-hued olive oil—a nod to old-world superstitions.

These new drinks join Cantina’s signature menu staples, including:

Margarita OK! – Tart, zesty, and served with hand-shaved ice

Spicy OK! – A bold blend of mezcal, orange spirit, and yuzushu

Viento OK! – A grapefruit and pink peppercorn no-ABV margarita
