A cocktail bar and lounge within the Rosewood Mayakoba resort, named after the zapote tree native to the Yucatán Peninsula. The drinks program, directed by head bartender Joshua Monaghan, draws on Mayan cultural heritage and regional ingredients, and includes reworked classics such as the Wana Bana. The kitchen emphasizes locally sourced produce, with charcoal-cooked dishes including lamb chops with agave and pink peppercorn.
