Undercote is the subterranean cocktail bar of Simon Kim's COTE, below the Michelin-starred Korean steakhouse on West 22nd Street in the Flatiron. The way in passes the illuminated dry-aging meat locker. Open since 2018, the T-shaped room is dark and plant-filled, with vertical gardens and ambient beats, and its owners compare it to a moonlit jungle. Principal bartender Sondre Kasin leads the cocktail program, and bar snacks come down from upstairs, among them a Steak and Eggs filet tartare with caviar. There are no reservations: walk-ins are seated first come, first served, only as complete parties, and the largest table seats six. It is closed on Sundays.
