Named after Hemingway's novella, this SoHo alleyway bar opened in 2017 and reached No. 9 on the World's 50 Best Bars at its peak—a performance that reshaped how the industry perceived Hong Kong. In 2019 became even No. 1 on Asia's 50 Best Bars. The program names every cocktail after a Hemingway work and builds each with a literary attention to detail: clarified, fat-washed, and technique-driven drinks served in a space where vintage records spin and the atmosphere carries the easy confidence of a bar that has already proved everything it needed to prove.
