Joshua Boissy and Krystof Zizka's Williamsburg institution, est. 2011 — rooted in the traditions and ceremony of oyster bars and absinthe cafés of New York, Paris and New Orleans. Thirty-plus oyster varieties, the largest absinthe selection in the United States (with a replica of the Olde Absinthe House fountain), and a 2016 James Beard Award for Outstanding Bar Program. Garden out back; bar is walk-in.
