Nicolas Munoz opened this mezcal-focused bar on the Quai de Jemmapes in April 2025, stocking over thirty bottles and building eight signature cocktails, half centerd on agave spirits. Bartenders Romain Dubois and Emmanuelle Navas work a white-and-silver two-level space designed by Studio Mur.Mur, and takeaway bottled cocktails extend the program beyond the room. Bisou Canal represents a growing Parisian interest in mezcal that Le Syndicat's French-only policy explicitly rejects, proof that the city's bar scene thrives on creative disagreement. Paris enters 2026 with the launch of Europe's 50 Best Bars on the horizon, a list that will almost certainly deepen the world's understanding of a city whose cocktail depth runs far beyond its current three global entries.
