Nicolas Munoz's no-menu bar on Boulevard du Temple since 2017: there is no carte, by design, bartenders build each drink bespoke from your tastes, at a flat €14 (€9 without alcohol), on seasonal produce with an eco-responsible backbone. Sexy, fun and sustainable, in its own words; heated terrace, no reservations. A second Bisou opened on the Canal Saint-Martin in 2025.
