Bellwether calls itself a casual neighborhood bar on Mount Tabor, occupying a corner of the historic Thomas Graham Building on Southeast Stark Street. The house describes a thoughtful and intentional approach to quality and seasonality, and sets out to offer Northwest cuisine, craft cocktails, and lovely wines all seven days of the week. Cocktails stay deliberately short on ingredients and long on depth, changing as produce changes. Seating is walk in only, with no reservations taken. Doors open at 4pm Monday through Thursday and at noon from Friday through Sunday, closing at 11pm throughout. A sister bar, Bar Loon, operates under the same ownership.
