Ed Diaz opened New Orleans' first free-standing craft cocktail bar on North Rampart Street on 08/08/08, a date chosen for luck that proved prophetic. The first cocktail menu, written by Neal Bodenheimer before he opened Cure, set a template that the bar has refined over seventeen years: serious drinks, late-night hours, no pretension, and a crowd that skews service industry. Bar Tonique bridged the gap between New Orleans' cocktail heritage and its modern craft movement at a time when that bridge did not exist. Every craft bar that followed owes it a round.
