Bar Colette sits on an upper level of West Village and describes its own drinks as quietly dazzling, built by bar director Ruben Rolon. The list changes regularly and places the bar's own creations beside classics for anyone who wants something familiar. A curated run of spirits sits behind them, and the kitchen sends out playful modern sushi from Kazuhito Mabuchi, executive chef partner of Namo next door. The setting is intimate, elegant and inviting, with glassware chosen to match the drinks. Walk ins are encouraged and reservations are limited. Service runs to eleven midweek and to midnight on Friday and Saturday.
