Sunset Park, the rooftop jewel atop Desa Potato Head in Bali, will host a special one-night-only takeover by Zest—the award-winning Seoul bar ranked No. 2 in Asia’s 50 Best Bars 2024 and No. 9 in The World’s 50 Best Bars 2024. The event, set for Sunday, 11 May 2025, is presented in collaboration with Diageo and promises a night of bold, sustainable cocktails from two of the world’s most innovative bar teams.
The takeover brings together Zest’s founders—Demie Kim, Sean Woo, Jisu Park, and Noah Kwon—with Agustin Da Sambiagio and the Sunset Park team. Guests will experience a bespoke menu inspired by ingredients foraged across Bali, crafted to fuse local flavors with Zest’s hyper-seasonal, zero-waste approach to bartending.

A Shared Philosophy of Low-Waste Innovation
Much like Zest’s minimalist, ingredient-driven bar in Seoul’s Gangnam district, Sunset Park champions sustainability through its use of local, seasonal produce and indigenous Indonesian spirits like arak. Both teams embrace a no-waste mindset—Zest redistills citrus peels, ferments pulp, and replaces mixers with in-house sodas and cordials, while Sunset Park incorporates recycled materials like oyster shells and plastic into its bar design.
Named the Ketel One Sustainable Bar Award winner in 2024, Zest’s philosophy is built around crafting high-impact cocktails with low environmental cost. Their appearance at Desa Potato Head will highlight that ethos through a one-night-only collaboration showcasing bold Korean botanicals, tropical Bali ingredients, and seamless technique.
A Sunset to Remember
The collaboration will take place Sunday 11 May from 5pm–8pm at Sunset Park. Walk-ins are welcome, and guests can expect a curated cocktail experience that explores Korean terroir, seasonal infusions, and a shared passion for sustainability.
Signature drinks from Sunset Park include the Tropical Island Martini and Red Sky at Night, alongside a range of low- and no-alcohol creations. The bar’s open-air setting, ocean views, and “Good Times, Do Good” philosophy make it the ideal canvas for Zest’s guest shift.
