Australian mixologist Jay Moir's trailblazer has set the tone for sustainability on Saigon's bar scene since 2019: an on-site garden and living walls, reclaimed furniture, an apothecary-style back bar of dried edible flowers and a herb-filled terrace, with homegrown ingredients through the drinks. No.77 on Asia's 50 Best Bars 2021 — and cocktails still average about four dollars.
