Schilling Roofbar puts it in three words on its own site: Nikkei meets Mixology. It occupies the seventh and eighth floors of the Alte Glockengießerei in Bergheim, with a view across Heidelberg, a Japanese-Peruvian kitchen of nigiri, tataki and ceviche, and craft cocktails built on syrups, bitters and toppings made in house. The bar also runs public cocktail courses and tastings. Falstaff's Bar Guide 2026 gives it 92 points, 47 of 50 for the drinks, and describes spectacular drinks with homemade syrups beside the sushi. Open Tuesday to Sunday from 6pm, Saturday from 5pm, with the bar running to 2am on Friday and Saturday.
