Panamericano Bar sits behind Novecento in Brickell, through a hidden entrance with a buzzer, and celebrates the spirits of the Americas. Only spirits from the Americas stand on the back bar, the room takes its cue from Charles H. Baker's library, and a custom bar puts guests at eye level with the bartenders. It opened in 2024, and Miami New Times called it a temple of mixology. The menu offers two takes on the Remember the Maine and a series of Cocktail Ceremonies, including a zero-proof Water Divination served to blindfolded guests. It is open Tuesday to Saturday from 5pm, and tables can be booked on OpenTable. The Pinnacle Guide gives it 1 Pin.
