Kevin Diedrich—2020 Best American Bartender at Tales of the Cocktail—built a programme around Asian-Pacific ingredients that sits at No. 16 on North America's list. Pandan, nori, yuzu, and lemongrass run through a menu that reflects Diedrich's Filipino and Chinese heritage without reducing cultural identity to a garnish. Partners Andy Chun and Jan Wiginton helped transform a former pisco bar on Sutter Street into a James Beard Outstanding Bar finalist.
