Le Quatrième Tiers

Le Quatrième Tiers is a cocktail and spirits bar on Rue Roucher, in Montpellier's Saint-Roch quarter, founded by Montpellier native Paul Périé after hospitality studies and stints in France, New Zealand and England. The room is small and warm, with a ground floor lounge, a cellar space below and a terrace outside. The list leans on Mediterranean terroir and the seasons, mostly house creations built from fresh, largely local produce, and it turns over as the year does. A shelf of spirits sits behind it, including Cuvée Quatrième Tiers, made with La Thériaque Spiritueux from foraged juniper berries, pine needles and fig leaves. The name nods to a scene in Pagnol's Marius.
