Understory is a cocktail bar and kitchen set in historic stone vaults beneath Rutland Place, named for the hidden layer that grows below a forest canopy. Its in-house lab makes the ingredients for the menu, and the first list, Batch 01 Halcyon Days, turns nostalgic British flavours such as Vimto, Irn Bru, marmalade on toast and Wimbledon strawberries into cocktails. Bar snacks and small plates run alongside, from caviar crisps to hot honey fried chicken.
