Chimney opened in 2019 in a 1920s loft on Zhongshan Middle Road in Hangzhou's Shangcheng district, founded by the owner-bartender Ellen Xu, who describes it as a neighborhood cocktail bar born from her time in California. Upstairs sits Bar Eg., a bar within the bar launched in 2024 as an experimental and collaboration space.
